Why We Love It
It’s always tempting to keep unhealthy snacks around because they are oh-so-good but these kale chips are crispy, salty, AND healthy so you don’t have to feel guilty about having a few extra. And, we love how Susan adds some extra spice to kick things up a notch.
The Chef: Susan Pridmore, Food Blogger & Cooking Instructor, The Wimpy Vegetarian

Susan is based out of Northern California and is a self-acclaimed “Flexitarian,” balancing the personal desire to move towards a vegetarian diet with a family who enjoys their meat. We love how practical and balanced she is towards her vegetarian cooking, making it seasonal, delicious, and hearty enough for even the most bullish carnivore. These kale chips are just one example of her recipes that look too good to turn down!

The Tip: Keep Your Kale Chips Crispy
Kale chips are all the rage these days but they’re notorious for getting soggy if not eaten the same day. Well, we’ve come up with a trick to keep them crispy so you can continue to enjoy them throughout the week (if they last that long)
Put dry uncooked rice into the bottom of your airtight storage container then put the kale chips loosely on top.
The rice works as a drying agent, absorbing any excess moisture and keeping your chips crispy.
